Grits Khichdi

Ingredients:

1 cup grits
1 chopped onion
2 minced chili peppers
1 chopped tomato
1 grated carrot
¼ cup green peas
¼ teaspoon turmeric powder
¼ teaspoon mustard seeds
5 curry leaves
Handful chopped cilantro
1 tablespoon oil
1 teaspoon ghee
Salt to taste
3 cups water

To make this tasty Indian breakfast recipe, first mix the mustard seeds and the curry leaves fry together in a pan of heated oil. Add the onions and peppers to this mixture and sauté until the onions are transparent. Then, combine the tomatoes, green peas, carrot, turmeric powder, and salt into the pan and allow the vegetables to cook for a few minutes. Once the vegetables are soft, pour in the water and bringing it to a boil. Next, slowly stir the grits into the boiling water. Be sure there are no lumps in the mixture. Cover the pan and allow your Indian breakfast recipe to cook for approximately five minutes. Continue stirring occasionally until the grits have absorbed all the water.
