Pao Bhaji Recipe

Pao Bhaji
Any restaurant worth its name in Mumbai, India, would have Pao Bhaji on its menu card. It is an Indian version of the goulash, only it is much spicier and full of veggies. It is something that the denizens of Mumbai drool over. There are surveys conducted on which street side stall dishes out the best pao bhaji in Mumbai, and it is a title several vendors vie for. Open a Pao Bhaji Stall and you will have people swarming around it like bees round a honey pot. It is also an all time party favorite. Here is how you make it.
Cooking time : 30-45 minutes Serves : 6
Ingredients :
3 carrots –chopped
1 small cauliflower chopped
½ cabbage chopped
10-15 french beans chopped
2 potatoes chopped
1 cup shelled green peas
2 capsicums chopped
2 Onions chopped
3 tomatoes chopped
8-10 cloves of garlic nicely crushed to paste
2 tbsp. oil
2 tbsp. pao bhaji masala (available in all Indian grocery stores)
12 Buns
Butter
Salt and red chilli powder to taste
Lemon Juice to taste
Chopped green coriander leaves and onions for garnishing

Preparation:
Wash and cut all vegetables (Carrots, cauliflower, cabbage, potatoes and beans) and cook in a pressure cooker . Once it is cooked, take it out and blend it well and keep aside. Take oil in a skittle and heat it. Add onions and sauté till golden brown. Add Tomatoes, capsicum, green peas, and garlic paste and sauté for about five minutes till the vegetables are cooked. Add the Pao Bhaji Masala and sauté some more for about 2 minutes. Add the blended mixed vegetables, salt and chilli powder. Garnish with onions, coriander leaves and butter. You can also add some lemon juice to have that ultimate tangy taste. Serve it with nicely buttered and toasted buns.
