Watermelon rind Dosa
The most nutritional part of a watermelon and one that we tend to chuck out is the rind. Though not as tasty as the pink insides, the rind is rich in natural minerals and vitamins. So make the best of it by making a delicious Dosa (the Indian version of a pancake) that the family will love.
Ingredients :
White portion of the watermelon rind grated -3-4 cups (Take care to leave out the green outside)
Fine Ladoo Rava (Sooji/Semolina) – 3 cups
All purpose flour (Maida) – ½ cup
Curry leaves – one smally bunch
Cumin seeds – 2 teaspoons
Grated coconut – 1 cup
Chillies cut finely – 3-4
Salt to taste
Method:
Mix all the ingredients and add sufficient water to make it into a batter-like consistency. Keep it for about ten to fifteen minutes. The Rava tends to expand a bit in the water making the batter thicker. Add a little more water to have a good consistency. Take a tava (griddle) and place it on the stove. Once the tava is heated pour about 4-5 tablespoons of the batter onto it and quickly spread it out with the spoon into a round pancake. Lower the heat and keep it covered with a lid that has a handle on top. Let the pancake cook for about 2 minutes. Remove the lid and check if it is done. There will be a nice brown crusty layer on the underside if it is properly done. Now turn and cook on the other side on a high flame(without covering, this time) for about one minute. While turning the pancake, take care that it does not break as the binding character of the batter is not very high and it tends to break easily. That the broken pieces also taste equally good is another matter altogether. The pancake can be served with spicy coconut chutney, which can be made by grinding 1 cup of grated coconut with 2 green chilles and salt to taste.
